Roger Watins Famous Honey Cookies Nov 2018

Ingredients

2/3 cup oil
1 cup sugar
1/4 cup honey
1 egg
1 tsp vanilla
2 cups flour
2 tsp baking soda
1/2 tsp salt
Turbinado sugar

Instructions

1. Preheat oven to 350°F
2. Mix the oil, honey, and sugar until smooth
3. Add in the egg and vanilla mix until combined
4. Mix in the flour, baking soda, and salt
5. If your dough is soft, refrigerate until firm
6. Shape the dough into balls and roll in the turbinado sugar making sure to coat the whole cookie. Shaking in a ziplock works great
7. Bake on parchment lined baking sheet for 7 to 9 minutes until the edges are light brown in color. Do not overcook

Roger Watkins Honey Lemon Cupcakes Jan 2019

Ingredients

Cupcakes
1/2 cup (1 stick) unsalted butter
3/4 cup granulated sugar
2 eggs
1 1/2 cups flour
1 teaspoon baking powder
1 teaspoon salt
1/2 cup milk
1/4 cup 🍯
1 tbsp lemon juice
One teaspoon Watkins vanilla
2 tablespoons lemon zest

Frosting
1/8 oz package cream cheese
1/4 cup unsalted butter
1/3 cup 🍯
3 to 4 cups powdered sugar

Filling
Lemon pudding

TJ's Mini Honey Pecan Cheesecak

 

TJ's Mini Honey Pecan Cheesecake

Makes 12

Ingredients

Cheesecake filling

1. 2 8 oz pkgs Philly cream cheese softened
2. 1/2 cup 🍯
3. 1/2 cup sugar
4. 3 eggs
5. 2 TBSP flour
6. 1 1/2 Tsp "Watkins" vanilla

Crust

1. 2 cups finely ground pecans
2. 1 Tbsp butter
3. 1 Tbsp 🍯
4. 1 Tbsp brown sugar

Instructions

1. Preheat oven to 350 degrees
2. Melt butter and add pecans, 🍯, and brown sugar
3. Form the pecan mixture into approximately 1 inch balls and place them into the bottom of cupcake liners
4. Firmly pressed the pecan ball into the bottom of each cupcake liner
5. In mixing bowl, beat cream cheese, 🍯, sugar, eggs, and Watkins vanilla until thoroughly mixed
6. Add flour slowly, mixing it in completely
7. Pour cheesecake mixture over pecan crust, filling each cupcake liner almost to the top
8. Bake for 22 to 25 minutes
9. Let cool completely
